50ml Plymouth gin
25ml Cream of coconut
Juice of 1/2 lime
Handful of raspberries
Sprig of mint
Served over crushed ice, short glass
Muddle a handful of raspberries in a short glass and then fill with crushed ice.
Fill a Boston shaker with ice and pour 50ml gin, 25ml cream of coconut, half a lime squeezed, then shake.
Strain over the crushed ice, add a sprig of mint and a raspberry if you like.
