Raspberry gin cocktail recipe

A refreshing gin-based cocktail, with cream of coconut, lime, mint and raspberry. Muddled, shaken and poured over ice. 

Ingredients

  • 50ml Plymouth gin

  • 25ml Cream of coconut

  • Juice of 1/2 lime

  • Handful of raspberries

  • Sprig of mint

Method

Served over crushed ice, short glass

  1. Muddle a handful of raspberries in a short glass and then fill with crushed ice.

  2. Fill a Boston shaker with ice and pour 50ml gin, 25ml cream of coconut, half a lime squeezed, then shake.

  3. Strain over the crushed ice, add a sprig of mint and a raspberry if you like.
